Honey Cream Pie

INGREDIENTS

3 eggs
2 Tbl flour
1 cup sour cream
baked pie shell
1/3 cup honey
1 tsp cinnamon
3 Tbl honey
DIRECTIONS

Separate yolks from whites of eggs. Beat the yolks until light and lemon colored. Combine the 1/3 cup honey with flour and cinnamon, then add to beaten yolks. Whip the sour cream lightly, just enough to give it a smooth, light consistency. Add to other ingredients and cook in top of double boiler until thick. Pour the honey cream mix into the baked pie shell. Beat egg whites until stiff and slowly add the 3 Tbl honey, continuing to beat. Spread this meringue on top of filled pie, and bake in 350 degree oven until meringue is lightly browned.

Note: Again, editor Beatrice Ojakangas notes that "Pies, tortes, cakes, and cookies are usually saved for the 'coffee table' which is [a] favorite Finnish way to entertain . . . it is generally served in three courses. With the first course, the coffe table participant takes a piece of cardamom flavored white bread and a cup of coffee. The second course is a piece of un-iced cake. The third course is the fancy filled cake. All along, a selection of cookies rounds out the menu." Maybe this was why, when visiting with her, Grandma often had two and three kinds of goodies on the table to go with the coffee.
