Rhubarb Custard Pie


3 cups cut rhubarb
1 1/2 cups sugar
2 Tbl flour
1/2 tsp nutmeg
2 eggs
1/2 tsp custard flavoring
1 tsp vanilla
1 unbaked 9" pie shell

Spread rhubarb in unbaked pie shell. Beat eggs, add custard flavor and vanilla. Blend sugar, flour, and nutmeg. Add eggs and beat until smooth. Pour over rhubarb. Top with a lattice crust. Bake at 450 degrees for 10 minutes, then reduce heat to 350 degrees and bake 30 minutes longer.

Note: One of the fun things about Grandma's house was going to the rhubarb patch to gather rhubarb, then going home to cut it up and make fresh rhubarb pie. Yum, yum!
